One of my Tom stories (and I'm already writing this with a Virginia accent) pertains to the Fallawater apple. Known as well as Winter Blush in northern New England. Tom and I were teaching a class at Cider Days and I brought out this green-yellow apple with a bright red cheek, explaining how it kept really well and made a decent pie. Then I said it was widely known throughout Appalachia. Turns out those were fighting words, for Tom said no self-respecting Fallawater he knew would ever have a reason to blush.
